And here we are with one more traditional Holiday season dish! This time from Brazil. It is usually served at the Christmas dinner and a very popular dish in there. It is very similar to the American chicken salad and it extremely easy to do. What takes a little while is hydrating the bulgur cracked wheat which can be done even before you start your prep, but the end result is so good that you won’t mind this 1h wait for hydration, hahaha. Well.. Enough said, you will probably be surprised by how much flavor this extremely simple recipe, with very simple and fresh ingredients can bring to the table!
LET’S GET STARTED!!
And don’t forget that you can always skip my step by step and go straight to the end of the post, where I list the ingredients and the quick instructions. HOWEVER, I got to warn you that you may lose some fun cooking moments and maybe some mistakes I’ve made and you could avoid, making your dish taste even better.
As I was saying in the introduction, the first step is to hydrate (1) cup of bulgur cracked wheat into warm water. Let it sit there for 1h.
By re-hydrating the bulgur wheat you will make it softer and bigger in size.
While you wait, make sure you cook and shred (1) lb of chicken breast, and chop (1) onion, (1/2) red bell pepper (1/2) yellow bell pepper, (1) cup of shredded carrots, (8) large olives, (2) Tbsp of fresh mint leaves and (2) Tbsp of fresh parsley. Also, give quick 5 min hot water bath in (1/2) cup of golden raisins.
Tip 1: To shred the chicken, you can put the cooked chicken into a pressure cook while still hot (just because the lid seals more safely than the regular pots and pans) and shake it for about 30 seconds. It is the easier way I’ve ever used for shredding chicken. I think I will make a tutorial about it someday.
Tip 2: If you’re not very fond of sweet and salty types of food you can skip the raisins. I love it, but many people have issues with them, so feel free to leave them out if you would like.
THROW IT ALL IN THE BOWL!!
Mix the wheat with all the other ingredients in a salad bowl, add (2) Tbsp of olive oil, (1/2) lb of mayonnaise, salt to taste and squeeze the juice of (1) lemon on top of everything. Mix it thoroughly, until evenly blended. Leave it on the refrigerator until it’s time to serve and, like the french say, voilà! Your delicious and easy salad is ready to be the star of the dinner or stunning side for some other dish you may have prepared.
Tip 3: You can make a lighter version of the salad using turkey breast instead of chicken and replacing the regular Mayo by low fat mayo or yogurt. I mentioned that because I kind of started on a diet this week, but still wanted to eat this deliciousness. I got tell you that by doing these replacements my calorie budget went down much slower…
- 1 cup bulgur cracked wheat
- 1 lb chicken breast, cooked, shredded
- ½ red bell pepper diced
- ½ yellow bell pepper, diced
- ½ cup golden raisins (optional)
- 1 cup shredded carrots
- 8 large olives, diced
- 2 Tbsp fresh mint
- 2 Tbsp fresh parsley
- 1 onion, diced
- 1 lemon, squeezed
- 2 Tbsp olive oil
- ½ pound of mayo
- ¼ tsp salt
- Hydrate the bulgur wheat, letting it stand in warm water for 1 hour. Drain the water and reserve
- Hydrate the raisins in hot water for 5 minutes and reserve
- Mix all the remaining ingredients with the wheat and the raisins in a big bowl, until evenly blended.
- Refrigerate for at least one hour and serve cold
